Nase:
Der Reserve Extra Brut duftet elegant und fein nach Germknödeln und nach ein wenig Brioche, nach gelben wie orangefarbenen Zitrusfrüchten sowie nach weißfleischigem Kernobst. Begleitet wird dies von hellen, floralen und ein wenig herben Kräuternoten. Der Sekt wirkt dabei durchaus kühl und straff, ist aber reif und saftig.

Gaumen:
Auch am Gaumen finden sich die kühlen und herben Noten. Ferner zeigt der Sekt Biss und unbändige Frische bei einer trockenen Anmutung. Hier entsteht Druck am Gaumen, aber mit dem feinen Mousseux und der gerade reif gewordenen Frucht auch eine beeindruckende Eleganz und Finesse. Bis ins lange Finale bleibt der Sekt straff. Er zeigt eine leichte Salzigkeit und wiederum herbe Kräuternoten. Das ist sehr gelungen und stimmig – vor allem wenn man dem Sekt Zeit im Glas gönnt, um sich zu entwickeln und immer komplexer zu werden.
