Genauso wie für unsere Porterhouse Steaks Bio lassen wir auch für das T-Bone Steak Bio ganze Rückenstücke behutsam im Dryaging-Raum reifen. Und echte Kenner wissen es: dry aged schmeckt das Fleisch gleich nochmals einzigartiger. Drei Wochen sind das Minimum, doch es gibt in unserer Metzgerei, einer echten Manufaktur, keine starr festgelegten Reifezeiten, nur ein wirklich guter Metzger erkennt genau den richtigen Moment um diese königlichen Steaks zu schneiden. Wir haben sogar zwei wirklich gute Metzgermeister.

Am besten das T-Bone Steak Bio mindestens eine Stunde vor dem Braten oder Grillen aus dem Kühlschrank nehmen, von beiden Seiten angrillen. Dabei darf die Hitze relativ stark sein. Doch Vorsicht: sogenanntes „scharf Anbraten“ ist für hochwertige Rindersteak immer zu heiß. Vor allem auf dem Grill darauf achten, dass das Steak schön goldbraun und saftig bleibt. Nach dem  Anbraten das T-Bone Steak bei milder Hitze ruhen und langsam durchziehen lassen. Zum Servieren noch einmal ganz kurz mit schäumender Butter erhitzen.

Das T-Bone Steak wird aus dem hinteren Viertel des Rückens geschnitten, es ist gut zu erkennen am T-förmigen Knochen, der Filet und Rückenstück trennt. Im Unterschied zum ganz ähnlichen Porterhouse Steak ist das Filetstück eher flacher und die Scheiben werden dünner geschnitten.

These cost a bit more than tennis balls, but they are so much nicer and longer lasting. For starters, they stay cleaner than tennis balls because they’re smooth rubber. Dirt won’t build up on them and if anything does stick, like grass or soil, it falls off once the dog slobber dries. They’re also thick, so they don’t fall apart or blow out like a normal tennis ball does in our dog’s jaws after 30 seconds. Our GS chomps on these like crazy and the only damage they’ve suffered is a crack that developed from the edge of the hole, but the crack is growing very slowly and none of these balls have totally failed yet. The balls do whistle when thrown ant high speed and that may help a dog track and locate it, but I’m not sure. Our neighbors hear the whistling too so it’s far from silent. Lastly the orange ball is easy to locate out in our yard, but the dark blue practically disappears.
