Origin: Caraz, Peru
Agave: Ensamble of Americana Expansa Gentry and Cordillerensis Harvest: 10 years (24 brix)
Cook: Ancient clay oven for 3-4 days with Eucalyptus wood
Crush: Hammer mill
Fermentation: NONE 
Distillation: Double in two copper pot stills (120 and 150 liters respectively). First distillation: Peruvian peppers ají amarillo and rocoto are added to a vapor basket, and in the second distillation the vapor basket + peppers are added directly into the pot. This spice adds to an alcohol-like flavor profile, particularly in cocktail usage.

Sorboxan is added for stabilization after distillation

Directions: Store away from sunlight, color will fade with time. Once opened, keep fresh by storing in fridge and use within 2 months. Do not store in freezer.
