Species Details

The American Paddlefish (Polyodon spathula) is an ancient freshwater species, over 125 million years old, and native to the Mississippi River and its tributaries in Tennessee, Arkansas, and Illinois. Known as “spoonbill” for its distinctive paddle-shaped snout, it is a close cartilaginous relative of sturgeon, though not a true sturgeon. Paddlefish can live over 50 years, reaching lengths of 5+ feet and weights of 15–60 pounds, depending on their river system. This wild-caught species filters zooplankton through its unique snout, producing roe that offers a sophisticated, accessible alternative to traditional sturgeon caviar. Its combination of wild provenance and distinctive biology makes Paddlefish roe a prized American delicacy.

Quality Indicators

Appearance of Paddlefish Roe

With small to medium pearls and a striking palette that shifts from misty gray and muted green to bold steel and silver highlights, Paddlefish roe delivers a visual experience that is both refined and uniquely American. The gentle variation in tones brings depth and character to each serving, creating a presentation that balances sophistication with the natural beauty of its river heritage.

Texture of Paddlefish Roe

This wild American roe offers a texture that is both refined and inviting. The small, well-formed pearls deliver a clean, satisfying pop that releases their flavor instantly. The result is a caviar that feels approachable for those new to the experience while maintaining the sophistication and quality that seasoned enthusiasts appreciate.

Flavor Profile of Paddlefish Roe

Paddlefish roe delivers a bold, earthy flavor profile that proudly reflects its wild American heritage. Its complex character opens with pronounced briny notes and subtle botanical undertones that speak to its Mississippi River origins. As the flavor develops, a rich, buttery smoothness emerges, coating the palate with creamy depth and a touch of sweetness. Despite its robust opening, the finish is unexpectedly clean and refined, with delicate mineral notes that highlight the purity of its source. This balance of intensity and elegance makes Paddlefish roe both an inviting introduction for newcomers and a rewarding choice for connoisseurs seeking authentic wild-caught flavor.

Storage and Serving Guide

How to Serve Your Caviar and Roe

Step 1: Proper Storage & Temperature

Keep your caviar and roe refrigerated at 28°F to 32°F until you're ready to serve. Remove from the refrigerator 10-15 minutes before serving to acclimate to the ambient temperature. Caviar and roe should be served chilled but not ice-cold, as extreme cold mutes the delicate flavors.

Step 2: Choose the Right Serving Vessel

Use non-metallic serving spoons to prevent a metallic taste from clashing with your caviar and roe. Mother-of-pearl, bone, or plastic spoons are the best options. Serve in small glass or ceramic bowls nested over crushed ice to maintain a safe temperature. If you don't have serving bowls, you may place the opened caviar tins in a bowl of crushed ice. The tins have food-safe varnish that prevents a metallic taste.

Step 3: Portion Appropriately

Plan for ½-1 ounce per person as an appetizer with other foods so all guests can have "a taste." For a full caviar portion, serve 1 ounce per person. Use a gentle touch when portioning and never press or crush the delicate pearls.

Step 4: Select Complementary Accompaniments

Serve with items that complement without overpowering the mild, nuanced flavors. We recommend:

  • Blinis or toast points (unsalted)
  • Crème fraîche, light sour cream, or clotted cream
  • Champagne, vodka, or crisp white wines

Pro-Tip: Skip the chives, red onions, chopped eggs, and other accompaniments in a traditional caviar service. These traditional accompaniments were introduced when preservation methods required heavily salting the caviar. With today's advanced refrigeration methods, caviar does not need to be over-salted and you can enjoy the caviar's true flavor profiles.

Step 5: Serve and Enjoy Immediately

Present your caviar and roe just before serving. Invite your guests to take small portions and savor slowly on the palate to appreciate complex flavors and texture. Enjoy within 2 hours of opening and never leave at room temperature for extended periods.

Pairings

American traditions pair paddlefish roe with bourbon, regional wines, or local spirits that bring out its bold, earthy flavor. Southern-style service often includes warm blinis, a touch of crème fraîche, and classic mother-of-pearl spoons to keep the roe’s taste pure. It’s also commonly enjoyed with smoked fish and fresh, artisanal breads, creating a relaxed but authentic way to experience this wild American delicacy while celebrating its deep Mississippi River roots.

Not a bad start

3 stars Thank you Netgalley and Briar Boleyn for the ARC! A camelot/king Arthur retelling with fae. I was hooked by the idea of this book immediately and was eager to jump into this world. • slow burn • enemies to lovers • who did this to you Morgan Pendragon watched her mother die by her father's hand when she was just eight years old, hiding under the bed. Morgan is believed to have the tainted blood of the fae in her veins and is cast aside so that her fathers illegitimate son, Arthur, can become the king. She's seen his cruel treatment of the fae firsthand, so when he sends her on a journey to find a fae weapon she seizes the opportunity to do more with her life. Along the way, she finds more than she could have imagined. I don't know a whole lot about King Arthur and Camelot but I had a lot of fun with this story! The plot has some similar tropes to popular romantasy books (From blood and ash) but there's enough originality here that it doesn't feel like I'm reading a copy. I liked how the fae were different in appearance than what is typical in most fantasy books I've read. In this book they have blue hair, violet skin and a wide range of other characteristics. I thought that the world building was easy to follow and I could easily immerse myself into this world. After reading the blurb I kept wondering when she was going to go on the journey to find Excalibur and it doesn't happen until around the 45% mark. The story is a bit slow at times but starts to pick up once they begin their journey to find Excalibur. The John Wick style Inn was a fun concept that I enjoyed reading about. There are a lot of similarities to this and FBAA and I would have liked to have it be a little more different, but I'm hoping book two will have the story turn into something of its own. Overall I enjoyed reading this story and I'm looking forward to reading book two especially after that ending.

From its intricately woven plot to its compelling characters, this novel delivers an immersive reading experience that will leave readers eagerly anticipating the next installment. Right from the start, I was drawn in by the prologue!!!
Format: Paperback, Format: Paperback
Queen of Roses (Blood of a Fae #1) by Briar Boleyn Genre General Fiction ( Adult), Romance, Sci-Fi & Fantasy, Dark Romance “More primordial than the stars. My name was on his lips as he promised unspeakable darkness to any who came between us.” Right from the start, I was drawn in by the prologue!!! I’m a big fan of “touch her, and you die” vibes, but I mean, what’s also not to love about a unique Arthurian retelling with gender twists, a treacherous royal court, a dangerous quest, magical Fae & mystical monsters, entwined with a bit of spice! Morgan, Princess of Pendrath and true heir to the throne has spent most of her life dimming her light to feel safe and to make others comfortable. She is treated as an outcast in the court and repressed by her family due to the blood of the Fae within her and forced to join the Temple of the Three as a priestess in training to one day replace Merlin. Her brother, King Arthur, who reminds me of Joffrey from Game of Thrones, later tells her that he has other plans and offers her a choice of the Temple or to marry her off for political gain, unless… that is, she can journey through the great unknown and return with a long-lost fae weapon with enchanted powers known as Excalibur. Her quest begins with a roguish crew that includes the mysterious, arrogant, and heart-tuggingly handsome Captain of the Royal Guard, Kairos Draven, whom she can’t decide if she wants to stab or indulge in pleasure with. Along the way are plenty of surprises, mystical creatures, and betrayal, all while Morgan uncovers more of the truth about herself and who she can trust. This book had intriguing storylines and lovable characters that kept me turning pages and wanting more. I can’t wait to see how it all unfolds and comes together in book 2, Court of Claws, which I just started reading!! Read if you’re into- Dark Fantasy/Romance Slow–Burn Question Everything Magic and Action Fae Arthurian Legend Stabby/Broken FFC Morally Gray MMC Forced Proximity Queen of Roses is perfect for Holly Black, Jennifer L. Armentrout, and Sarah J. Maas fans. Please check the trigger warnings page in the table of contents before reading this book.

3.5 stars, A little boring to say the least.
Format: Kindle
Wow so I'm not sure where to begin on this one. This was a very different take on the legend of Arthur and Excalibur. This is told from the point of view of Morgan the sister of Arthur. Honestly the first 50% of this book is world building and character building which unfortunately was super boring for me. Morgan to me was a female MC that had a hard time in believing in herself. Sometimes taking too long to understand exactly what was going on around her. Draven was also a different male MC, like I couldn't put my finger on him and what he was all about. It was not until the last 10% of the book did we get some answers on the mystery that is Draven. The other 50% of the book centered around this big journey with everyone having a different motive. We see a spark of magic around this time that had me excited but then we never expanded upon that and what it could mean for the female MC. I feel like I want to read the second book just to see where this goes, but the spice was probably a 2 out of 5. Side characters are ok, Lancelet was fun but I almost felt like I wanted more.

A bewitching retelling of Arthurian legend!
Format: Kindle
In a land where the Fae have nearly become only a legend and those who still posses even a morsel of the blood are few and far between, Morgan finds herself cast aside by most of society due to her rumored half-Fae lineage, including her brother, King Arthur. With the kingdom at the brink of war, Arthur entrusts her with a quest to retrieve a Fae weapon of legendary power: the sword of Perun, Excalibur. Accompanied by men she loathes, Captain Kairos Draven and Ragnar Whitehorn, she embarks on her long and unbeknownst perilous journey, only to find that things she once believed to be myth are in fact very real. With devastating twists, omitted truths, witty banter and fierce action, Queen of Roses leaves you begging to know more about the secrets of Aercanum! Wow, wow, wow! Going into this story, I did not realize that it was going to be a retelling of Arthurian legend, especially not one with a fantastical twist! The unique spin almost gave me The Witcher vibes and I think adding Fae into the mix was quite interesting. I knew the basics of the legend but after reading this book, it has piqued my interest and makes me want to learn more about it. My attention was snatched as soon as I finished the prologue and I knew that I was going to devour this story. I truly enjoyed the gender swaps and even how Arthur was portrayed as villainous. Morgan’s past and even her parts of her present is absolutely heartbreaking, and I felt for her at times. I can only recall one other book that made me hate characters the way I despised Florian and Arthur, leaving me with my blood boiling and feeling disgusted. Even after finishing the book, Draven is still a mystery to me and I cannot figure out how to feel about him. I guess they just means that the author did an excellent job at conveying each character’s persona! The rich world building and imagery made it easy for me to visualize the places that the group visited along their journey. I am truly engulfed in this story and I cannot wait to see wait fate awaits Morgan and how the Fae will be even more incorporated in the next book!. I received a free copy of this book and am voluntarily leaving a review.
