「食」をとても大切にしている大久保さん

職人醤油でも人気の淡口醤油である「紫大尽」。この名前によく似た「紫歌仙」は濃口醤油で、両方とも長野県の大久保醸造店が手掛けています。

「食」をとても大切にしている大久保さん。「贅沢をしたいわけじゃないんだ。そのものズバリを食べたいんだよ」という言葉に象徴されるように、季節の旬のものだったり、極力自然に近いもの、素材のおいしさをそのまま食べたいという方です。

 

また、業務用の出荷では出来るだけガラス瓶を回収して再利用。電気は太陽光発電。「醤油は自然の力でつくるもの。だから、自分たちが自然に負荷をかけちゃだめだよね」と。大久保さんと話をしていると、醤油づくりに向き合う考え方がしっかりしている印象を持ちます。

大久保醸造店に「小大(おだい)のひしお」という商品名の濃口醤油があって、これは1年半熟成で、最後に脱脂加工大豆の諸味を加える製法です。「丸大豆だけだと、どうしても目指したいうま味に行きつかないからね」と、その理由を説明してくれるのですが、この「紫歌仙」は大豆、小麦、食塩のみで、脱脂加工大豆を使っていません。

 

熟成期間を伸ばすことで、大久保さんの理想の味を実現しているのです。それも、3年熟成です。再仕込醤油や溜醤油など濃厚さが特徴の醤油では3年という熟成期間は耳にしますが、濃口醤油で3年熟成は超が付くほどの長期熟成。色は濃くなりますし、酸化が進んで香りが劣化してしまうリスクもありますが、この「紫歌仙」は塩カドがとれてやさしくてまるい味わいが印象的です。

 

「紫歌仙」を搾るのは年に1度。春先に圧搾をしたら、次は翌年です。ちなみに、「紫歌仙」の名前の由来は在原業平。平安時代の三十六歌仙のひとりで、そこから「歌仙」がきています。

So, as other reviewers make clear, this is very similar to Pack Darling and The Beta. It’s much closer aligned with The Beta, in plot and maybe more like Pack Darling with characters. That being said, I don’t hate this…..but it wasn’t great either. It’s both books mentioned but just….less. Less angst, less emotion, less feeling. The plot feels very half fleshed out, and the “bad guy” feels underwhelming. I didn’t really feel any real emotions from and of the male leads, except maybe Oliver. The others fell sorta flat for me. And Mika makes herself out to be this big bad ass straight outta training and then we never see it from here again with the one fitting room incident as the exception. SPOILER: The whole, “Oh, I’m actually probably an Omega, but I don’t wanna be but I do actually wanna be but no one can ever know my secret that I do nothing to hide “ thing fell so flat. She never commutes to believing she was secretly an omega, but also mentions her “secret” a lot. It just felt so manufactured. I’m intrigued enough to read part 2 and see how the author closes everything out, but this is not one I’ll recommend or ever come back to.
