御前酒的重要元素為菩提酛，而水在這個釀酒工夫的前期中擔當著十分重要的角色。今次所使用的為硬水，在乳酸開始發酵時，酸度的浮現較使用軟水時來得要快，因此在加入酒母前，已形成獨特的酸味。
