Siberian Garlic is a cold-hardy hardneck variety prized for its bold flavor, large bulbs, and rich burgundy-purple skins. Each bulb produces 5–8 sizable cloves that offer a spicy intensity when raw and mellow into a sweet, creamy flavor when roasted—perfect for elevating both simple and gourmet dishes.

This variety thrives in colder climates and benefits from fall planting, reaching maturity by mid to late summer. Known for its robust growth and high allicin content, Siberian Garlic develops strong roots that support consistent yields. It performs best in well-drained, fertile soil with steady moisture, and is a favorite for northern gardeners and garlic lovers seeking both potency and performance.

Siberian seed garlic is well-suited for home gardeners, chefs, and market growers alike. Its deep color, high medicinal value, and reliable production make it a standout in any garlic patch. Whether you're cultivating it for its bold culinary profile or its resilience in challenging climates, this variety offers rich rewards in both flavor and form.

  • Marbled Purple Stripe Hardneck Garlic.
  • A bold, spicy garlic ideal for cold climates.
  • Spicy when raw, sweet and creamy when roasted.
  • Striking burgundy-purple wrappers with 5–8 large cloves per bulb.
  • Cold-hardy and vigorous with high allicin content.
  • Performs best with fall planting in well-drained, fertile soil.
  • Harvest in mid to late summer; cures and stores well for a hardneck.

Flavor and Aroma Profile

  • Flavor Profile: This hardneck variety is known for its hot, bold flavor when raw—ideal for garlic lovers who enjoy a fiery kick. Roasting transforms the flavor into something mellow and creamy, making it a versatile choice for everything from sauces and stir-fries to roasted meats and vegetables.

  • Aroma Profile: Siberian Garlic delivers a pungent, musky aroma when raw, with high allicin levels intensifying the scent. Cooking softens the aroma into a rich, nutty fragrance that enhances savory dishes with warm, earthy depth.

Planting Time

It is typically planted in the fall for a summer harvest, similar to other hardneck garlic varieties. Planting in the fall allows the cloves to establish roots before winter sets in, leading to healthier plants and larger bulbs.

Scaping

Hardneck garlic varieties like this garlic produce scapes, curly flower stalks that emerge from the center of the plant. While the scapes are edible and delicious, their removal redirects energy to bulb development, resulting in larger cloves. Harvest scapes when they curl once or twice and use them in culinary dishes like pesto or stir-fries.

Storage and Preservation

How to Store Fresh Garlic

Once harvested in early to midsummer, allow the green stalks to completely dry and turn brown to ensure the garlic is fully cured. For best results, hang the hardneck bulbs in a cool, dry, and airy location to promote proper curing and preserve their bold flavor and nutrients. This type of garlic keeps well for several months, making it an excellent choice for both fresh and roasted dishes.

Preserving Garlic for Long-Term Use

To extend the shelf life of this garlic, harvest when the foliage has fully browned and the bulbs have reached maturity. Cure them in a dry, breezy location to retain their aromatic flavor and beneficial compounds. With its smooth texture and well-balanced taste, this garlic variety enhances everything from sauces to roasted vegetables, while holding its freshness in long-term storage.

Best Practices for Drying and Freezing

Freezing garlic after it has been properly cured is an effective way to extend its shelf life while maintaining its rich flavor and quality. Depending on your future use, you can freeze it in several forms—whole bulbs, individual cloves (peeled or with skins), or even minced. Although it’s possible to freeze garlic right after harvest without curing, it’s usually not advised. High moisture levels in uncured garlic can cause a soft or mushy texture once thawed, and the flavor may not be as robust.

Puppy loves these sticks!
Color: Dogwood & Calming, Size: Medium
Dogs love these sticks! Must smell and taste like real wood because it keeps my puppy from bringing real sticks in the house from outside. She is a heavy chewer and these sticks keep her occupied. We are on our 2nd set.

Our dog loves it but it wasn’t durable enough to last
Color: Dogwood Jack, Size: Large, Color: Dogwood Jack, Size: Large
Our lab took to it as soon as we gave it to her. Perfect size for our 80 lb yellow lab. However, now that it’s in about 10 days, she’s able to break off chunks from this bone that are dime size or larger, and we have to throw it away

No problems after a year and a half
Color: Dogwood & Calming, Size: Medium
Have been regularly buying these for my corgi for about a year and a half. The 2 pack lasts about a month or 2 each time. Pieces break off in small enough pieces that they safely pass through his digestive system. He gnaws each one down to about 1/4 the original size before we take it away and give him a new one. He continues to have regular bowel movements and has a healthy appetite so I can’t imagine any problems arising after so long. I have tried other alternatives and every other similar chew breaks off in larger pieces and didn’t feel comfortable letting him chew/eat them. I noticed there are a few 1 star reviews saying their dogs got sick off these but after a year and a half I have had 0 issues with this product. I guess it depends on the dog and how big of pieces they are swallowing. My dog ingests pieces about the size of a grain of rice so just pay attention and you should be fine.
