In bocca è fresco, con una buona sensazione pseudo-calorica che dona il giusto equilibrio.Il Palette AOC Rosè di Château Henri Bonnaud è un vino prodotto nella più piccola appellation della Provenza (conta infatti soltanto 42 ettari vitati). Per questo vino sono state utilizzate uve provenienti dalla vigna di Le Tholonet vicino ad Aix-en-Provence. I grappoli vengono raccolti a mano e per l'80% vengono fatti vinificare in botti di acciaio inox, mentre il restante 20% in botti di rovere francese per 8 mesi. Il risultato è un vino equilibrato da bere piacevolmente a tutto pasto.
Si abbina bene ad un tagliere di salumi e formaggi e con piatti di cacciagione in genere.
