Filipa Pato and William Wouters are the dynamic duo behind this wine, combining Portuguese tradition with Belgian precision. Working in Bairrada, they farm organically and biodynamically, nurturing old-vine Bical on pure limestone soils. Their philosophy is “wines without make-up,” allowing the vineyard to speak for itself. In the cellar, they rely on wild yeast fermentations, minimal intervention, and gentle lees ageing to create wines that are pure, elegant, and expressive of place. Filipa, the daughter of legendary winemaker Luis Pato, brings deep regional knowledge, while William, a sommelier and restaurateur, brings a finely tuned palate—together crafting wines of authenticity and charm.
