Blue Steel #1 (Aogami #1) requires more advanced sharpening skills compared to Aogami #2, but rewards the user with a finer and longer-lasting cutting edge, making it highly valued among professional sushi chefs.

The AO-NAMIUCHI series features a distinctive wave-like blade pattern, reflecting traditional Japanese forging aesthetics while emphasizing its high-end craftsmanship and unique visual identity.

The Deba is a traditional right-handed single-bevel knife designed for breaking down whole fish.
