De wijn en het wijnhuis :  Superkrachtige wijn met een intens rode kleur (bijna zwart) Zowel in de neus als in de mond ongelooflijk veel geuren en smaken. Heel complex en absolute TOP in Priorat.  Kan zeker 10 jaar bewaard worden. 

Serveertip 1 : Karafferen  - Zeker enkele uren op voorhand karafferen ! Door de wijn veel lucht te geven worden de tannines versneld zachter. Karafferen gaat zo: schenk de wijn over in een ruime karaf zodat de wijn goed in contact komt met zuurstof. De aroma's komen zo mooi 'los' en de wijn 'geeft' zich beter.

Serveertip 2 : Decanteren doe je om wijn te scheiden van het bezinksel. Decanteren is niet moeilijk: zet om te beginnen de fles wijn rechtop zodat het bezinksel naar de bodem van de fles kan dalen. Ontkurk de fles. Hou de hals bij het uitschenken boven een lichtbron, dan zie je precies wanneer het bezinksel begint mee te komen. Laat de wijn voorzichtig in een brandschone karaf vloeien. Decanteer rustig en met vaste hand en gebruik indien nodig een zeefje. Het mogelijke bezinksel is hier een kwaliteitspunt aangezien de wijn niet gefilterd is en al het beste van de druif in de wijn zit.

Temperatuur : 15°C en bij zomerse temperaturen tussen 14°C en 15°C

Biologische landbouw

In Parés Baltà cultiveren we de wijngaarden op een ecologische manier zonder herbiciden, pesticiden en kunstmest. Om onze grond te bemesten, hebben we onze eigen kudde schapen die de maanden na de oogst voor de wijngaarden zorgt.

We hebben ook bijen die de wijnstokken tijdens de bloeiperiode bestuiven.
Bij ecologische landbouw is het cruciaal om de planten op het juiste moment te behandelen. We doen bijvoorbeeld aan groen snoeien bij rassen die gevoeliger zijn voor ziekten. Zo verhogen we de luchtcirculatie en de blootstelling aan de zon.

Bovendien doen we aan groene oogst door een deel van de druiven af te snijden voordat ze rijpen. Het belangrijkste doel is om de concentratie en het karakter van de druiven die op de wijnstokken zijn achtergebleven, te vergroten.

Sommige van onze wijngaarden worden verbouwd op eeuwenoude terrassen. Ze waren bijna verlaten vanwege hun hoge onderhoudskosten, maar we besloten ze opnieuw te gebruiken. Ze zijn volledig geïsoleerd en omgeven door de natuur en onze wijngaarden volgen de orografie van de bergen. Wilde dieren zoals wilde zwijnen, vossen, konijnen en adelaars worden vaak gezien. 

Geen kunstmatige irrigatie. Het enige water dat de wijnstokken ontvangen, komt rechtstreeks uit de regen.

Our German Sheppard loves these

These cost a bit more than tennis balls, but they are so much nicer and longer lasting. For starters, they stay cleaner than tennis balls because they’re smooth rubber. Dirt won’t build up on them and if anything does stick, like grass or soil, it falls off once the dog slobber dries. They’re also thick, so they don’t fall apart or blow out like a normal tennis ball does in our dog’s jaws after 30 seconds. Our GS chomps on these like crazy and the only damage they’ve suffered is a crack that developed from the edge of the hole, but the crack is growing very slowly and none of these balls have totally failed yet. The balls do whistle when thrown ant high speed and that may help a dog track and locate it, but I’m not sure. Our neighbors hear the whistling too so it’s far from silent. Lastly the orange ball is easy to locate out in our yard, but the dark blue practically disappears.

My dogs favorite balls

These are great for my dog who always has to have a ball in her mouth. Not too hard so I don't have to worry about her teeth. They last for ever. They do lose their shape a little over time (like I said, she always has a ball in her mouth) they become a little oval in shape.
