Deze vintage gaf ons een elegant, fruitig en perfect uitgebalanceerd zoet rood.

Tannines zijn goed geïntegreerd en de zuurgraad zorgt ervoor dat deze wijn na verloop van tijd kan rijpen.

Wijngaard
Mix van verschillende kleine percelen met klei-kalksteenbodems, rondom de wijnmakerij in Rasteau. Wijngaard genaamd “Combe de l’Eoune”, op een hoogte van 320 meter.

Wijnmaken
De druiven worden vóór zonsopgang met de hand geplukt om optimaal te profiteren van de koele nachttemperaturen, en vervolgens gesorteerd op de wijnmakerij. Ze worden volledig ontsteeld en vervolgens gefermenteerd in roestvrijstalen tanks. Dagelijks druiventrappen en overpompen, totdat het verwachte suikergehalte is bereikt. Mutage met neutrale wijnalcohol, daarna rijping in eikenhouten vaten gedurende zes maanden.

Proefnotities
Dieprode wijnkleur. Intense neus, met sappige zwarte kersen en cacaotonen. Een ware smaakexplosie in de mond: soepel, rijk en geconcentreerd, met aroma’s van gekonfijte pruimen en witte peper.

Foodpairing
Chocoladegebak - Chocomousse - Gebakken foie gras afgeblust met Vin Doux Naturel Grenat – Geroosterde duivenfilet met crème de cassis  – Bleu d’Auvergne kaas – Infusie van rode bessen en honing – Chocoladefondant met kersenvulling.
