Begeleidt stevige gebakken of gegrilde vis met bijhorende sauzen, salades met gevogelte, kippebilletjes met kruiden in papillot maar ook schaaldieren als King crab poten en kreeft.

Klimaat:
Het klimaat van Monterey is Mediterraans neigend naar een gematigd zeeklimaat door de afkoelende winden uit de oceaan (De druiven bevatten iets meer zuren dan in Paso Robles). Paso Robles is Mediterraans met warme, droge zomers en milde winters. (Chardonnay is hier rijper dan in Monterey)

Ondergrond:
Druiven uit Monterey 68% en Paso Robles 32%. De bodem in Monterey bestaat vooral uit zanderige leem en keien met hier en daar graniet in de ondergrond. De bodem in Paso Robles is meer kalk gedomineerd.

Vinificatie:
De volledige trossen worden voorzichtig geperst in inox kuipen. Het heldere sap ondergaat een fermentatie van 2 maand in koele omstandigheden. Een deel van de wijn ondergaat daarna een 2e malolactische gisting die de wijn zijn boterige component verschaft. Een ander deel krijgt een kort verblijf op eiken houten vaten waarna alles weer geblend wordt om een complete en mooi evenwichtige Chardonnay te garanderen.
