Calciumlactaat
Ons Calciumlactaat is een kwaliteitsproduct en is een extract van melkzuur. Het werkt goed bij de productie van kaviaar, parels, spaghetti en bollen met behulp van sferificatie technieken. Calciumlactaat kan ook worden aangebracht op vers fruit en cantaloupes om ze stevig te houden en de houdbaarheid te verlengen.

Het is een wit niet hygroscopisch zout en is een aanbevolen bron van calcium. Calciumlactaat levert calciumzouten in een oplosbare vorm om te reageren met alginaat, gellan of bepaalde soorten carrageen, waardoor gelvorming mogelijk is zonder verhitting. De smaak is discreter dan die van calciumchloride (zout en soms bitter).

Calciumlactaat wordt aanbevolen in alle reacties van omgekeerde sferificatie en reageert waar alginaat en calciumbron intiem gemengd zijn, zoals bij diffuse setting of full contact gelering.

Calciumlactaat werkt ook goed bij de productie van druppels, kaviaarparels en alle vormen van spaghetti door onderdompeling van de alginaatoplossing in een calciumzettingsbad.

Sodium Alginaat (Natriumalginaat)
Sodium Alginaat is een extract van zeewier, dat door moleculaire koks wordt gebruikt voor het bolvormingsproces (sferificatie). Het vormt een gel in aanwezigheid van calciumionen.

Sodium Alginaat is een geleermiddel dat kan worden gebruikt om zachte, stevige, hittebestendige gels te maken en om schuim te produceren. Sodium Alginaat wordt ook vaak gebruikt als verdikkingsmiddel, emulgator en textuur verbeteraar.

Durable, Flavorful, Chew Toy

This bacon flavored scorpion shaped dog toy has been a huge hit with my Labrador. The material feels extremely durable and appears to be made from a hard nylon that can stand up to serious chewing. At first, I was skeptical about the bacon scent because I couldn’t smell anything when I opened the package.
