Chapitre Meunier is José Michel’s tribute to the estate’s signature grape. Made from Meunier grown in Moussy, Brugny, and Saint-Agnan, it reflects both terroir and the house’s low-intervention approach. This release is based on the 2022 harvest, blended with reserve wines from 2021.
Fermentation was divided between stainless steel (54%) and 600L oak barrels (46%), preserving fruit while adding depth. As with all Chapitre wines, it was made without fining (non collé) or filtration (non filtré). After tirage in June 2023, it was disgorged just one month later, in July 2023, with a low dosage of 3 g/L.
This is a fresh, pure expression of Meunier: juicy red apple, white pepper, and herbs, with gentle grip and texture from the oak. Its youth gives it energy and vibrancy, while the short lees ageing keeps it bright and focused.
