Copy Pastry is een uniek bakboek van 'sweet designer' Jurgen Koens. Het staat boordevol desserts met verschillende texturen en smaakbelevingen, spannende ijsgerechten, bite-size friandises, verrassende chocoladecreaties zoals mandarijn-kardemom en rabarber-paprika, heerlijke taarten en natuurlijk ook hartige en zoete viennoiserie. De recepten in Jurgens boek zijn stuk voor stuk stoer, eigenzinnig, oogstrelend en bijzonder lekker. Een must-have dus voor elke thuisbakker en patissier!

Jurgen ontwikkelde een unieke methode om bereidingen en technieken in verschillende vormen, smaken en toepassingen terug te laten komen in zijn patisserie. Waar de ene techniek zorgt voor een krokante toets in een taart is het in het andere recept de basis voor een verbluffende friandise. Beheers je bijvoorbeeld het maken van zijn crémeux, dan kun je er eindeloos mee variëren. Of neem de brownie: de ene keer is het een taartbodem, in een andere creatie wordt het verwerkt tot een crumble.

Jurgen Koens is chef-patissier, food designer, productontwikkelaar en kok. Hij kookte en bakte bij diverse gerenommeerde restaurants en was o.a. chef-patissier bij Manoir Inter Scaldes. Tegenwoordig runt hij de Pastry Club in Eindhoven en ontwikkelt daar patisserieproducten. Het is Jurgens droom om iedereen patisserie te laten ontdekken.

Update: these are great! I only charged them the day they arrived 3 months ago from Amazon, and have not had to charge them yet. They work efficiently every time my whole family loves using them,,especially the grandkids. I specifically wanted "push button" , and easy-rechargeable. I have arthritis so it's pretty amazing and wonderful. These rechargeable grinders are lightweight when they arrive, and easy to fill from the top. For each grinder, you will need to turn the top opening slightly to the left to release it, and then pull it open. My 9yo grandson had to show me. The salt and pepper grindersmake a relatively, low grinding sound, and have a small, shining,light at the bottom where the salt and pepper come out onto the food. The performance is good, the salt and pepper output seems not too much and not too little. Charging these grinders was extremely easy, and the little charging unit stand is provided with a C charger which you can connect into the back of the charging unit, and a USB connection on the other end for the wall .

I bought these 6 months ago and they are great. They have stopped charging several times. The problem is the salt gets on the contacts and oxidized the contacts and the unit stops charging. You take sand paper and clean the contacts and they work fine again. I feel if the material on the charging port is made with stainless steel and the contacts on the grinders themselves are larger, I would have given this a 5 star. Even As it stands, I would purchase these again. I have several bad experiences buying manual grinders that last about a month and break. These are High Quality, but need to upgrade the contacts.
