In de wijngaard: Druiven afkomstig van verschillende percelen tussen de 10 en 90 jaar oud. Oogst met de hand. Rijen en stokken staan ruim uit elkaar aangeplant. Er wordt niet geploegd voor een levendige topsoil. 
In de wijnkelder: 10 dagen Maceratie op de gehele trossen. Trage persing van 22 tot 48 uur wat de wijn extra maceratie tijd geeft. Vervolgens wordt de most gevinifieerd in de kelder van Arnauds huis in Détain. Ongefilterd, zonder toevoeging van So2.
