Bereid de kapoen op Franse wijze en rooster ‘m rustig in de oven op lage temperatuur met witte wijn, bouquet garni, aardappels en morieljes. Kapoen is net als kalkoen verrukkelijk om te vullen met rijke smaken, zoals truffel en Madeira met verse kruiden en Gasconne gehakt en boter onder het vel.
