Wijn en gerecht : Fantastische wijn om te drinken met verfijnd vlees zoals fazant, patrijs, eend, konijn, hert, rosbief en kalfszwezerik.

De wijn : In de neus zwarte bes, kersen, bramen versterkt met tonen van kruiden, soms mokka. In de mond is de smaak rijk, zijdeachtig met een mooie levendigheid in de afdronk. De evolutie maakt het flexibel en warm, met een aanhoudende sensatie.

Temperatuur : 16°C

Serveertip 1 : Karafferen  - Zeker enkele uren op voorhand karafferen ! Door de wijn veel lucht te geven worden de tannines versneld zachter. Karafferen gaat zo: schenk de wijn over in een ruime karaf zodat de wijn goed in contact komt met zuurstof. De aroma's komen zo mooi 'los' en de wijn 'geeft' zich beter.

Serveertip 2 : Decanteren doe je om wijn te scheiden van het bezinksel. Decanteren is niet moeilijk: zet om te beginnen de fles wijn rechtop zodat het bezinksel naar de bodem van de fles kan dalen. Ontkurk de fles. Hou de hals bij het uitschenken boven een lichtbron, dan zie je precies wanneer het bezinksel begint mee te komen. Laat de wijn voorzichtig in een brandschone karaf vloeien. Decanteer rustig en met vaste hand en gebruik indien nodig een zeefje. Het mogelijke bezinksel is hier een kwaliteitspunt aangezien de wijn niet gefilterd is en al het beste van de druif in de wijn zit.


Domaine Françoise en Denis Clair

Opgericht door Françoise en Denis Clair in 1986 met een oppervlakte van 5 ha, heeft dit domein wijngaarden in zowel Saint-Aubin als Santenay.


Ondertussen is na de intrede van hun zoon Jean-Baptiste de wijngaard uitgegroeid tot 14 ha. De witte en rode wijnen behoren tot de aantrekkelijkste van Bourgogne. 

De familie Clair was een van de eersten die de voordelen inzag van het koelen van druiven na de oogst om het maximale uit hun aromatische potentieel te halen.
De meeste percelen van hun wijngaarden liggen langs het plateau met de grootste grand cru's en premier cru's van Puligny Montrachet, pal naar het zuiden gericht. De bodem is ondiep en erg rotsachtig, met veel kalksteen. De helft van de wijnstokken is 60 jaar oud, de andere helft 20 jaar oud. De oogst is steeds met de hand.


Saint-Aubin

Met illustere buren zoals Chassagne-Montrachet in het zuiden en Puligny-Montrachet in het oosten, en grenzend aan het terroir van de mythische Grand Cru Montrachet, hebben de wijngaarden van Saint-Aubin alle troeven in handen om heel grote wijnen te produceren.

20% is aangeplant met Pinot Noir op matig of zelfs steile hellingen, en dit op een hoogte van 350 tot 400 meter. De enigszins koele temperatuur die komt door de hoogte en de winden die de vallei doorkruist, wordt gecompenseerd door een zuid- en zuidoostelijke oriëntatie van de wijnstokken, waardoor de Pinot Noir een goede volwassenheid bereikt. De wijngaarden hebben voornamelijk witte kleiachtige bodems met minerale kalksteen.

Erkend als AOC sinds 1937, is het grootste deel van de wijngaard van Saint-Aubin geclassificeerd als Premier Cru.

We also bought a ball launcher from Walmart for about $9, and the LED ball fits perfectly—same size as a tennis ball, just 100x cooler. This ball is waterproof and mostly floats, although I haven’t been brave enough to throw it into the pond or river because I’m positive my dogs would treat that as a full-scale navy search mission and never find it again. It’s easy to charge, and even with 2–3 hours of walking daily, I only have to plug it in every few weeks. We’ve had it for months now and it’s still going strong—super durable. We don’t let them chew on it off-walk (because Labs), but during fetch? It’s a champ. Also—small but hilarious detail—when they catch it, their mouths light up. I have accidentally created glow-in-the-dark dogs. I love this ball so much I’m buying a backup because life without it is not an option. Best dog toy EVER. Whoever invented this deserves a medal, a parade, and a lifelong supply of tennis balls they’ll never lose again. 🐾💡

The spa works as intended it lights up at night, which is super helpful for short winter days and for when the snow starts to pile up, it illuminates the snow pile that dog dropped it in so I can find it.
