Wijnomschrijving

Serieuze Cava die pas echt tot leven komt in de combinatie met een gerecht.

Deze Cava wordt volledig gemaakt van de lokale Trepat. De druiven groeien in de hoogste wijngaarden van het huis, op zo’n 500 meter hoogte. Grote temperatuurverschillen tussen dag en nacht zorgen voor een goede ontwikkeling van de aroma’s en het behoud van frisheid in de druiven. De bodem bestaat hier uit leisteen en zand. De wijngaarden worden bewerkt volgens biologische principes.

Wijnbereiding

Na de handmatige oogst volgt een schilweking van ca. 8 uur, waardoor de wijn zijn mooie lichtroze kleur krijgt. De druiven worden geperst, waarna het sap vergist met behulp van een selectie van de natuurlijke gisten. Na de tweede vergisting op de fles rijpt de wijn verder op de lies, totdat hij wordt gedegorgeerd. Een elegante, uitnodigende wijn met voor de Trepat kenmerkende aroma’s van aardbei en sappig rood fruit. Fris en aromatisch met een fijne mousse.
