Shibui sources the whisky here and distills it in stainless steel pot stills from Indica long-grain rice with black koji, then matures it for eight years in ex-fino and Manzanilla sherry casks. The result is bottled at 40% ABV: dried stone fruit, red fruits, and vanilla on the palate, a spiced oak backbone, and notes of banana and cream on the finish.
