Crafted at Casa San Nicolas, in Arandas, Jalisco by Maestro Tequilero, Jesus Susunaga and his team, each bottle of this small-batch high-end tequila is produced with the aim of capturing the aromatic, caramelized agave notes that are typically lost in the production process. The result is a unique, agave-forward sipping experience with new and unexplored flavors from the agave. 

Tasting Notes for Mayenda Tequila Blanco

Mayenda Tequila Blanco’s multi-dimensional experience begins with aromas unfolding in layers, delivering a sturdy foundation of wildflower honey, cinnamon and more subtle top notes of orange blossom and fresh grass. Undertones of baking spices, fresh herbs and pepper emerge and weave their way through the caramelized agave notes on the palate. A sip offers a silky, decadent articulation of the sweetly perfumed agave, followed by waves of honey, and roasted squash. It finishes with a lingering echo of citrus, honey and baking spices.

• 1.5 oz Mayenda Tequila Blanco
• 0.75 oz Agave Syrup
• 0.75 oz Fresh Lime Juice
• Hibiscus Powder
• Method: Fill a shaker with ice, add all ingredients together and shake. Strain into a shallow coupe glass that has been dusted with hibiscus powder.
• For a richer, more intense tasting experience, serve alongside both a raw and roasted wedge of pineapple dipped in pink Himalayan salt. Take a small bite of the raw wedge of pineapple, followed by a sip of Mayenda Tequila, and repeat the same for the roasted pineapple to note the different flavors and aromas that each bring out in the tequila.

Production Notes

For Mayenda Tequila Blanco, only the finest 100% Agave Azul is hand-harvested with a low jima cut to remove harshness & bitterness, before embarking on the unique process. The deepest flavors of agave are unearthed by adding these two pioneering steps of craft and care: First, macerating, or steeping, the roasted piñas (agave hearts) in the base distillate, inviting the aromas and flavors of caramelized, cooked agave into the liquid. Secondly, blending with agave miel, the "honey" from the agave cooking, to bring layers of complexity – sweet, caramel, vegetal, floral, and peppery notes. The final distillation of Mayenda takes place in copper pot stills, which captures the sweetness and complexity of the cooked agave without any added sugars or additives.
