Lamb shanks need to be cooked over low heat for a long time to become velvety, succulent and to achieve fall-off-the-bone tenderness. We recommend braising, a combination-cooking method that starts with pan-searing followed by slow cooking in a liquid.  You will be surprised by the freshness and flavour.  They are very low histamine due to being flash frozen on production.
